Garden Herb Roast Chicken

There are many ways to roast a chicken, but if you’re looking the perfect mix of herbs, pepper, allium and citrus, we got you! This bright and herbaceous blend tastes like it came straight out of the garden. Use our Garden Grilling Blend as a dry rub on and under the skin as well as inside the cavity. This recipe is simple, yet flavorful and will certainly be a hit at any dinner party or if you just want some good chicken.

Pro Tip: salt your protein as soon as you get it, and let the salt absorb into the protein fully before seasoning and cooking.

Tools:

  • 24” x 12” Roasting pan

  • Sauce pan

  • Whisk

Ingredients:

  • 1 whole chicken (small to medium)

  • Garden Grilling Blend

  • 1-2 onions

  • 1 bulb of garlic

  • 1 lemon

  • Salt

  • 3-4 tablespoons of butter

  • 3 tablespoons of avocado Oil

  • 4-5 tablespoons of flour

Directions:

  1. Preheat oven to 450°

  2. Salt chicken liberally and massage into the skin

  3. Don’t forget to season the inside cavity

  4. Cover and return to fridge for at least 20 minutes

  5. Once ready, take chicken out and pat dry with clean towel and place on roasting pan

  6. Sprinkle the Garden Grilling Blend all over the chicken making sure to cover all the skin in a layer of the seasoning

  7. Sprinkle a little more salt on the top of the chicken

  8. Slice the onion, lemon and garlic and stuff the cavity with aromatics

  9. Let Chicken come to room temperature before cooking (approx. 30 mins to 1 hour depending on size and starting temp)

  10. Drizzle avocado oil on the top and bottom of the chicken

  11. Place butter on top of the chicken

  12. Put in the oven for 1:15 hours or until it reaches 175° internally (Check every now and then to ensure even cooking)

  13. Once finished, take out to rest for 10-15 minutes.

  14. Slice and serve

  15. Garnish with lemon and herbs if you’d like

Pan Gravy:

  1. Scrape bits (frond) of the baking pan and pour drippings into a saucepan over medium-high heat

  2. Add flour to make a roux, encorporate fully

  3. Combine with broth and whisk

  4. Reduce

  5. Season with salt and pepper and serve in a gravy boat or bowl
